Mini Fritattas & French Toast Cinnamon Roll Bake = YUM!


I stayed up until 2:00am last night.  So, about 3:30 today I crashed.  Totally zonked.  Complete with drool running down my chin.

About 5:30ish, I woke up to realize NOTHING was planned for dinner AND I was out of freezer meals.   I thought about ordering DQ, but I’m much faster…and much better.  So, I got my sleepy patooty up and went to the computer.  We have chickens.  And that equals eggs.  Lots of fresh eggs.  And I had found some new recipes on Pinterest I wanted to try.  And they both called for a lot of eggs.  So, tonight, breakfast was what’s for dinner.  And it was delish!  And easy!  So much so, I decided I MUST share.


 

 

 

Mini Fritattas

These were easy and fun!

The recipe is simple as can be:

Beat 8 eggs and 1/2 cup of half and half.  Add salt and pepper as you would to scrambled eggs.

Pour eggs into a well greased muffin tin (12 muffin cups).

Add whatever fillings you like to each!!

I set up my fillings buffet style and had the kids come and create their own.  They loved it!

Our fillings of choice were:  fresh spinach, fresh mushrooms, onions, diced ham, fried bacon, Italian blend shredded cheese, Paremesan cheese, and Mexican blend shredded cheese.

I was really worried they would stick because when I scramble eggs, I always have some stickage issues!  But, I was pleasantly surprised.  The fritattas popped right out of the muffin tins.

Serve with salsa for an added zing!

 

 

 

 

French Toast Cinnamon Roll Bake

This was super duper easy as well.  The recipe called for pecans, but my boys didn’t want them, so I left them out.

Ingredients:

1/4 cup melted butter
2 cans (12.4 oz each) Pillsbury® refrigerated cinnamon rolls with icing
5 eggs
1/2 cup heavy whipping cream
2 teaspoons ground cinnamon
2 teaspoons vanilla
1 cup chopped pecans
3/4 cup maple syrup

Directions:

Melt butter and pour into a well-greased 13 x 9 inch pan.  Sprinkle cinnamon over butter.

Cut the cinnamon rolls into small pieces (8 each).  Lay into the bottom of the pan.

Beat eggs well and add cream, vanilla, and cinnamon.  Mix until well blended.

Pour over cinnamon roll pieces.

Sprinkle with pecans and drizzle syrup over the top.

Bake at 375 degrees for 20-30 minutes. Remove from oven.

Heat the icing from the cinnamon rolls in the microwave for 10-15 seconds.

Drizzle icing over the top.  Sprinkle with powdered sugar.

Serve with syrup…. although I did NOT.  It’s already going to send you into sugar shock!
